Chana Masala (Vegan)

The Indian cuisine is known for being hearty, satisfying and full of spices that are invaluable to our health. Chana Masala is one of those indian dishes that is often made vegan (The indian cuisine is very vegetarian friendly). Chana masala has a lot of spices, a delicious tomato based sauce and most importantly, chickpeas! This meal is not only enjoyable for a sit-down lunch or dinner, but it is also a meal that could be prepared in advance and packed in lunchboxes to enjoy at work or university (it tastes even better the day after it is made).



My Recipe:

  • 3 table spoons of of olive oil

  • half an onion, finely diced

  • 2 cloves of garlic

  • 1 table spoon of grated ginger

  • 1 carton of tomato puree (135 grams)

  • 1 table spoon of garam masala

  • 1 teaspoon of cumin

  • 6 tomatoes diced

  • 400 grams of boiled chickpeas, you can use canned

  • 2 and a half cups of water (adjust depending on your desired consistency)


Add the olive oil into the pot and wait for it to heat, then add the onions, the cumin, and cook them until they obtain a golden colour, once the golden colour is reached and the onions appear to have 'wilted', add the garlic, minced ginger and cook for an extra minute. Then, add the tomato paste followed by a splash of water till a mixture with a paste like consistency is formed. To the paste, add the garam masala, diced tomatoes and the chickpeas. then add water till the chickpeas are covered. close the pot and cook on medium heat for 30 minutes.
